Do I need to add tomato paste while cooking?

The amount changes according to taste and preferences. But we recommend sautéing some tomato paste in olive oil or butter. Our Turkish Tarhana Soup mixture does not include any food coloring ingredient.

There are so many recipes for Tarhana, and I am a bit confused. Can you elaborate?

Correct! That makes tarhana soup an excellent fit for diverse cultures and choices. Feel free to try all of them. So don't be surprised when you see recipes with added eriste (noodles), chickpeas, celery, chicken or pepperoni.

Why are there Greek Trahana, Albanian Trahana, or Turkish Tarhana?

Traditional tarhana soup is a shared legacy of the Ottoman Empire and, therefore very popular in formerly Ottoman lands such as Greece, Albania, Bosnia-Herzegovina, and Turkey.
