Can I make caramel (doce de leite/dolce de leche) by cooking while in the can? We can do this with dairy sweet condensed milk..

You do not need to do this. With dairy milk, the solids burn easily, which is why people cook caramel in the can. This isn’t the case with coconut milk, which can absorb much more heat. You can make coconut milk dulce de leche directly on the stove with a 14 Oz can of full fat coconut milk, 3/4 cup brown sugar and 1/4 tsp salt, cooked on medium heat and stirred frequently for 30-40 minutes.

Has anyone tried making dulce de leche with this? The "boil in the opened can" method.

I made in in my crock pot. Covered the can with an inch of water and set to low for 8-10 hours. Woke up to the most amazing caramelly dulce de leche

There IS now a product that IS Organic (like this) that the Brand name is called "LET's DO", IF you want an ORGANIC condensed milk.It is sold on the AZURE STANDARD page. Check to see if your local health-food stores can get this in, as well

Does this cook similar to regular condensed milk? If anyone is familiar with brigadeiro, that’s what I would be doing.

I do not know what brigadeiro is, but I make a pumpkin pie, because this is sweetened, I reduced the amount of sugar in the recipe. The pie was wonderful, even the ppl who can have dairy loved it.
