The gas valve "should" have a common size thermocouple fitting. I've never seen thermocouples for sale for different size gas fittings.

Unfamiliar with this unit and it may be an intermittent pilot rather than a standing pilot which the Honeywell part is made for.

From the manual for the water heater, it appears the pilot light is a standing pilot type and the thermocouple you've identified will meet what you need for a replacement thermocouple.

Will this work on a gas fireplace??

If the gas fireplace has a "standing pilot" (a gas pilot flame always on) and there is a gas valve that turns on the gas on command, this may work if the thread size is correct on the gas valve. The sensor has to be in the gas pilot flame. If there is no "standing pilot" (i.e., there is a spark generator that turns on the main "burner", then you will not be able to use this.
