Item Package Quantity:3 Product Description Intense ruby red in colour with violet hues. On the nose, it combines the typical Cabernet spiciness with mature fruit aromas of dry plums and cherries. Powerful on the palate, with soft tannins, excellent concentration and a long finish. The Cabernet Sauvignon grapes for this wine are sourced from the Perdriel, Lunlunta and Agrelo vineyards; sites producing some of the highest quality fruit in the Mendoza region. Soils are predominantly sandy loam and vines are trained according to the vertical shoot positioning system. Yields average nine tonnes per hectare. 2010 in the Mendoza region saw a decrease in overall yields and a significant delay in ripening. Warm temperatures in January and the early weeks of February were followed by a notably cool March and April. Harvest for the Cabernet Sauvignon was delayed by 15 days, with grapes struggling to reach ripeness. Despite this cooler temperature trend, conditions remained dry, producing healthy fruit with lower sugar levels (and subsequently alcohol) characterised by aromatic intensity and excellent concentration. Grapes were all hand picked into small, 15kg cases before undergoing five days of cold, pre-fermentative maceration at temperatures of 10 degree C. Alcoholic fermentation followed, lasting 12 days in total with the juice temperatures resting between 25-28 degree C. Post fermentative, malolactic fermentation had a total duration of 10 days. 60% of the finished wine was then transferred to French oak for six months of barrel ageing, before undergoing natural clarification and mild filtration prior to bottling.
