Has anyone noticed a difference in using this product versus saki or sherry? re: this product includes salt

I bought this cooking wine because it was recommended in some of the Chinese recipes I've tried. Honestly, I don't see any difference between using this wine and using a dry sherry. I wouldn't use saki----it's much too strong, but the Chinese cooking wine even smells like sherry. There is salt in it. If you decide to use sherry, don't use cooking sherry because it does contain salt. I hope this helps.

is shaohsing good for replacing sake while making yakiniku sauce?

Good quality UNSALTED shaoxing wine has an appearance and flavor similar to amontillado or marsala wine. Most inexpensive dry sakes are much lighter in color and flavor, but are similar in being low acid and fairly (but not totally) dry. Bottom line: yes, it will work fine - but it's not quite a perfect substitution.

Should this be stored in the refrigerator?

I am not storing in fridge. I looked on the bottle and didn't see anything to indicate it should be refrigerated.

In the product bullet points above, it says gluten free, so I ordered it. However, it very clearly states that it contains wheat...
