Most common Ikea allen wrench used is 4 and 3 mm. I don't remember but I think this was 3mm.

Size of female socket, will fit 5mm hole?

I think that is right. 5mm is 13/64. They are really really nice quality and work very well. I am a builder and used on an outside door.

The length of the screw relates to fully tightened? My boards are 35mm wide

No the length is the physical length You will need screws at least 40mm in length to made room for the nut
