The secret for paella... Don't be stingy with the saffron, use plenty!

Q: Do you cover the pan while the rice cooks in your paella pan?

NO, do not cover it!!! You also do not stir it! Give the pan a shake every once in a while. The recipe that I usually use has you take the pan off the heat when the rice is cooked and cover it with a clean dish towel for 5-10 minutes.

Q: Can this rice be used for other rice dishes?

I don't see why not. It is a short grain rice perfect for forming the "soffrito" at the bottom of the paella pan. But it is rice, after all.

Q: Has anyone compared this Santo Tomas bomba rice to the considerably less expensive Matiz bomba rice also sold on amazon?

Doubt there would be much difference.
