what size is the cooking surface??

For the Demeyere? I no longer have this item so can only give you approximates. I still have the internal wire rack, which I use with my Nordic smoker. It's about 11 inches across. I would say not more than three inches clearance in the lid area - from the wire rack to the inner surface of the lid. I could easily smoke two Cornish game hens in this - and did once - but not a full size chicken as it would have been too tall to fit under the lid. Good luck with it if you purchase it.

what are the cooking times with this product. i have read about people cooking a small roast for up to 8 hours.

If you haven't already purchased this item, I suggest you look at my review. If you have, before mine fell apart, I smoked a brisket in it for 8 hours. The thing with smoking is, you're cooking on a very low heat, so it takes longer. You'll want to add more wood chips ever couple of hours. A side of salmon, depending upon thickness, would get smoked 20 to 30 minutes. Be sure to smoke skin on with fish. You'd not believe the difference!

Where is this shmoker made?

All Demeter cookware is proudly made in it historic site in Belgium and always has been. It is NOT made in Asia, nor USA as those uneducated about Demeter say below. Sad people do t confirm facts before stating them. In fact, you can go on a tour of there meral melting in Belgium at their famous building. Demeter is a high end or luxury brand. The make cookware with highest quality and highest workmanship. The make products with handles attached outside the coin area so grim doesn’t build up like in all other cookware even cleaned well. It makes for ease of cleaning after cooking on superior quality stainless. I have the egg poacher/suffley for steaming eggs which I love and can be used as small pan also. I purchase their highest end with handles that don’t get hot in saucepan and sauté pan. Demeter is best cookware in world. No, I don’t work there nor know family who do. I’m just a humble fan who owner four of their cookware. I hope to get the smoker next avoid the mess and hassle of smoking on bbq. I love the speciality pans. The smoker can also be used to do other things.
