Can this take a 500ml brew without the coffee reaching up to the filter?

It can easily take 500ml. You have room for even 600 before touching the filter.

What's the difference between the v60 pourover?

This is a decanter for a few cups of coffee. It includes a filter holder for your filter papers. It’s quite good but I don’t use it that much as it takes a while to fill the decanter for a few cups. The V60 is just the filter holder to sit on a glass. I bought the V60 pour over after and that can sit on any cup or glass of your choice. Makes great coffee. I use it every day. Hope this answers your curious question.

Can the decanter withstand being placed over a very low gas flame for 3 minutes whilst being filled?

Wouldn't advise it. Recommend just pre-warming the decanter with the water used to rinse paper filter. You don't want to be drinking your brew really hot anyway as you won't get all the bean's flavours. Ideal drinking temp in around 55-60c.

What size filters does it require?

it takes size 2 filters but you can put size 4 in i do. You have to fold both sizes to fit as it needs to go to a point(very easy)or you can choose to purchase the special filters designed for it at a cost, that i'm not willing to pay. great device though.
