Q: Is the needle length 1" or 1-1/2"?

The thinnest part, I guess considered the needle, is approximately one inch.

Q: Do these come with needles in other lengths or gauges? And do they come with caps for the needles?

As far as I know they only come as specified in the description. No, there are no caps provided. These are intended for other than medical use and a protective cap in unnecessary. The only change I have seen is that some I ordered came with the plastic needle portion and some came with metal.

Q: Is the syringe needle made out of metal or plastic?

The needle itself is metal. The part that attaches to the syringe is plastic.

Q: Will this work for shimmer and sheening inks? The particulate won't get stuck in the needle?

I've only used it a couple of times to ink my pen cartridges so I can't really tell you specifically whether it will work for them. The needle seems sufficiently thick that I suspect you won't have any problems. It's only a few dollars so it's worth a try.
