Q: This may a dumb question, but can this thermometer also be used to measure the temperature of your soil?

This should be able to measure soil temperature as long as the probe can be placed deep enough to cover the sensor on the tip

Q: A reviewer said it takes at least 24 hours to register. Is this true?

If they mean "to register" for the temperature to read correctly, absolutely not. I stick it in my compost and have a reading in about 1 to 2 minutes at the most. I'm sure if I left it longer it might settle to an "exact" temp but I'm not doing a scientific experiment, I'm just wanting to know where my compost pile is at. As long as I'm within a degree or 2 I'm satisfied.

Q: Can this thermometer be calibrated if needed?

There is not any info about calibrating this thermometer in the very informative text on the package or in the video on this product on their website. It's a "backyard" compost thermometer, not an extremely accurate scientific instrument. It worked great for me, revealing what stage the compost breakdown was at and when it was done, at 4 weeks.
