Can this be played with a US switch?

Yes. Also when u play it, it’s in English too

Does it still work on u.s. switch if its in Japanese ?

Yes it dose as the switch is not region locked and its in English the only difference is the language of text on some of the box

Can this be played with multiple players? Could my 3 boys play together if I buy 3 of the kits?

I'm not sure about that one, this kit is more of a walk-through and instructions only however they do allow you to test and play with your build in a built-in game(s) that shows off it's features.
