Based in Apulia, the sunny southern region of Italy, Pastificio del Colle has achieved a reputation as one of the best pasta manufactures in Italy. Mr. Vito Nettis follows in the traditions laid down by his uncle, Mr Vito Nettis senior, who established the company early in the 1920s, offering an exciting variety of pastas ranging from the traditional spaghetti, macaroni, vermicelli to up-to-date coloured forms sombreroni, lingue di suocera, spighe, zucchette, spugne...until coloured pastas have become the Pastificio del Colle’s real novelty and the renowned trademark. Pastificio del Colle's high quality pasta is produced using first rate Apulian durum wheat semolina, thoroughly mixed with warm water in a steel kneading machine. Then the dough, softly pressed forward, passes through the traditional round bronze dies. Finally the pasta is of the desired texture necessary to hold the sauce better, and is slowly dried at low temperatures.
