Has anyone had trouble with water going from hot to very cold. We used ours for the first time and it worked some of the time but not all the time!!

Assuming you're are having this problem using the same water Bucket going from hot to cold, and that your propane bottle is not near empty... Is it possible your bucket water temp was already slightly over 80 degrees, and the shower temp dial was maxxed out? It raises the source water 35 degrees and the built in safety switch stops heading water at 120 degrees as a scald guard. If so try cooler water or turning down the large temp dial. Otherwise I suggest phoning Mr. heater tech support (toll free)

What kind of water hose does it come with? Is it very stiff or soft that kinks?

It has a silicone hose, you can kink it, but it isn’t easy to do. I have had no issues with it kinking during use at all.

Can water turn off from the shower head

For a couple of bucks you can buy a small thumb turn valve to thread between the shower handle and the hose at Lowes or HD. Also Amazon has same concept/different design options.

can you turn the water flow off at the shower head?

No, you either want to be ready to get in when you light it, or have a way to catch the water that pumps constantly.
