Fun, fresh and frugal.
I saw one of the recipes from the book used on the Home and Family show, so I decided to give it a try. I am an artist and crafter, so the creativity of this appealed to me.I am still reading, but how smart is this author? She starts you out at the very beginning with a fast and easy farmer's cheese. This is so basic and easy that it encourages you to know you can do this and will keep people reading the rest. She also has many photos, so you can really see if you are on track. Very well thought out.My dogs are loving the leftover whey on their dog food, so it gets a "paws up" rating from them as well.

I like this book
I like this book. I've made several of the recipes and now I don't buy cottage or ricotta anymore.The author must have a nearby goat herd! Goat milk is available for $6/qt here, making it a expense I'll pass on.I use tulle, wedding veil material, instead of cheese cloth, and washes and dries better, reusable , stronger . I put a tablespoon of bleach in a half gallon of water to sanitize the tulle, rinse it well after the soak.

Excellent Resource.
Cheese making, it seems such a mystery to me. Yet it really isn't. It also isn't difficult to make some soft cheeses at home without a lot of special equipment and ingredients.Several points to note about this book and the recipes:You will need some special things- Rennet, sometimes, which is what helps your cheese become cheese and cheese cloth and maybe some citric acid. But this book will guide you through all of that with an explanation of why you need what items. Do not expect to buy this book, get it in the mail one day and start making cheese.You will need to gather your supplies. None of it is expensive but you will need to have everything on hand when you begin.This is not for aged cheese. You won't learn to make stinky cheese or harder cheese that need to sit and be aged for a while. This book is about fresh, easy, cheeses. One hour is about correct. Although I will say that it took me a little bit longer than one hour I guess I move slow.Everything in this book is clear and easy to read. There are lovely pictures in this book and step by step directions. Every recipe I tried turned out great. Some of the cheese was not to my liking but it set up and looked and tasted as it should have based on the pictures and descriptions. The directions were clear and easy to follow.If I were teaching someone as a beginner, I'd suggest they get this book and then I'd help them as needed. This is a great resource.And home made cottage cheese is my new favorite, I don't think I'll ever eat store bought again. It's that simple and that yummy.

Need Cheese? GOT some MILK and an Hour? You'll have Cheese.
I made the VERY basic cheese, that turned out good and tasted ok, but needed some additional seasoning. Then I tried the Mozzarella recipe which was fun and turned out much better with just a little more effort. I need to zero in on the seasoning again, but the taste was very good, more creamy than store bought cheese, and the transformation from large curds to a gooey pliable cheese was great. Going to try several other types. but I need to eat what I've made so far. Both cheeses I made were DONE in LESS THAN HOUR. XLNT

The guide lines
The explanations are so clearly and understandable page after page to the end of the book. Ms. Claudia Lucero, she's very very smart! She knows what people wanted. I use this book for my family personal experiment. This book very very helpful. Now, I can make cheeses every day for my family to enjoy.Thanks you so much Ms. Lucero!

Warning! Habit Forming!
This is an extraordinarily helpful book but it is very habit forming. Once you know the techniques you want to make cheese then more cheese. When a family member (whom we all know and love but will not name) absquatulated with my copy I immediately rushed to buy another. The prudent reader might best accompany it with a book on exercise and another on calorie counting!This book describes a few basic recipes and performs variations on their themes so that the reader can follow the logic of the small changes which can produce harder or softer cheeses and which can produce major differences of the cheese style. My favorite I believe is the string cheese with bits of sun dried tomato and basil, though I'm a fan of just about everything else. Even the failures turn out well. I'm presently using up a cheese I didn't quiet dry enough, but that makes it into a wonderful, although unanticipated, sandwich spread or filler for lasagne.

Learning primitive skills....priceless!
Who knew you could make cheese in one hour? I'm working on learning some primitive/ancient skills because I feel like we as a civilization have lost all the wonderful arts that we once had. I want to teach my kids and grandkids something to leave as a heritage, and this is fun, easy, simple recipes and step by step directions that anyone can follow. You will instantly want to go make cheese after only a few pages. The author, Claudia Lucero has a real desire to pass along her wealth of information and is a skilled cheese artisan. I really had no clue it was so easy to make fresh cheeses. These don't have to be aged at all and literally, you will be eating cheese after one hour! GET THIS BOOK!

Wish I could give it a hundred stars!!
I have been making cheese with hit or miss results for about 2 years now. When I got this book I wondered how I had missed getting it until now. It is amazing!!! The directions are step by step with photos. Each recipe is unique and different. And every one of the recipes I have made has been outstanding with perfect results. Each recipe has been delicious. You don't have to have a cheese cave and wait three months for delicious cheese----you are done in an hour and you get REALLY DELICIOUS cheese---with simple ingredients. Everyone who is starting to make cheese should have this book so that they get started on the right foot---and everyone who has been making cheese and just wants something easy and delicious or wants to add a twist to mozzarella or paneer should have this book. I will be buying copies to give away to my friends. It is awesome.
