How many microns is the mesh?

This skimmer mesh is 500 microns. It has two openings per mm. My husband, who is a chemist, checked it for you. Hope this is helpful.

Can this be used when making ghee to skim off the whey foam?

I never tried ghee but I know it takes the foam off cooking beans and lentils.

Does the handle conduct heat?

Mine does not. It's not in hot liquids long enough when I use it. I'm not sure if it would, were I to let it sit in the hot fluids. However, as it's a skimmer, I can't imagine why I would do that.
