"Mono" and "stereo" terms are misleading here. The correct label would be "balanced" and "unbalanced". A "balanced" connection would use all 3 pins, #1 being Ground, #2 being the Hot or positive signal and pin #3 being the Cold or negative signal. An "unbalanced" connection would use only pins #1 and #2, ignoring #3. You could create an "unbalanced" "stereo" connection where pin #1 is ground and common to both "sides", and pin #2 would be "left" and pin #3 would be "right". This would be a typical headphone jack. If you are using this for an instrument cable connection, such as a guitar, use pin #1 as ground and pin #2 as Hot or signal. You would not use pin #3.
