Q: Would these work well and not tear for skiing?

Yes, I think they’d be great for skiing!

Q: Is this a rip stop fabric? Does it run when snagged?

Since it’s silk I assume it would run when snagged. I haven’t snagged mine.

Q: Does this include top and bottom?

Yes. Buy them as large as you can; they are stretchy but run small. Fill disclosure - I'm 6'6" / 230, so lots of stuff is small on me. I think the XL would fit a 6' / 190 guy perfectly.

Q: What is the MM count?

These are super lightweight; they do run a little short, but they stretch. As to your question re: mommes ( MM ), the weight of a piece of silk fabric that is 45" X 100 yards, I got no freakin' clue. The fabric itself is semi-translucent. They work great as an extra layer when it's cold out, but other than that, they are of limited use.
