Would this work for stainless steel?

I believe it will polish just about anything that can fit in the chambers. I imagine shape would have the biggest impact on the polishing.

Are these good for coin cleaning?

I would not recommend this for cleaning coins, it is used as filler in a rock tumbler to prevent the grit from becoming stuck in the corners
