Q: How is this different from the Signature model?

The NEO features our Flow-Control Portafilter, which helps to ensure the proper time and pressure is achieved regardless of the beans or grind size used. Our other models, including the Signature, rely solely on a perfectly prepped coffee bed to build the necessary back-pressure to craft espresso. The NEO is recommended for those just getting into espresso, or those without access to a high-quality grinder and fresh beans.

Q: Do any plastic parts contact the hot water/grounds?

Yes, the piston is plastic and contacts the hot water. The exit port is also plastic (or a sort of rubber, can't tell for sure). But they are all well made and sturdy. The only part that doesn't seem like high quality (for this price point) is the tamper, but you can use your own.

Q: I have a decent grinder; is it worth upgrading or is the Neo still okay?

I use espresso ground coffee for the NEO and that works well! So if your coffee grinder has a very fine setting, that should work great!
