How wide are the top and bottom plates?

The top is an inch 1 1/4 and the bottom is 1 inch.

will 1/8" thick class be acceptable substitution instead of 1/4"?

No it would not work. It would be too thin to slide back and forth without breaking. Also, the track is for 1/4 inch and if you use 1/8 inch, it will rattle around. Not recommended as a replacement
