& Brand of flour I buy from our local natural foods store to feed our 150 year old sourdough starter … I bought from Amazon with hopes the better price could help
This item is the exact same Lable, & Brand of flour I buy from our local natural foods store to feed our 150 year old sourdough starter … I bought from Amazon with hopes the better price could help, but over the first month of using this our Mother-starters developed molds, and secreted liquid acids (Not a normal thing!!) … Upon looking at the package there was no "Use by Date" or even a packaging date on the bag … We switched back over this last month to the previous flour (supposed to be the same brand and everything) and the starters are all acting normal again … I don't know if this flour is falsely packaged, or if it is old, or just stored in humid consitions, but it was NO GOOD for feeding a sourdough Mother (Starter) … we are using the rest of what we have from this order in our baking process, so I guess it's an ok price point for that, but I will not be buying it again, we almost lost a 150 year old starter from it's use :(

Great Flour
I absolutely have been loving this flour. I converted my sourdough starter over and have been making spelt bread with it. There is definitely a mild learning curve if you’re used to using wheat flour. Spelt dough doesn’t rise/expand nearly as much, it bulk ferments faster than wheat, the dough is more delicate and needs gentler handling, it also burns easier. I use 350 degrees for sandwich loaves and 400 degrees for artisan style bread, compared to using 450 degrees for bread made with your standard bread flour.I have also been making spelt pancakes with my discard, easy and delicious. Buy in bulk, divide into freezer bags and freeze what you don’t need and keep a bag at room temp handy. Great way to keep your flour fresh and it also keeps any eggs from hatching if any pests made it in. Organic grain sometimes contains organic bugs (I haven’t seen any), but it’s just extra protein.

I can eat this and I don’t get sick like I do with regular wheat.
I bought the pasta attachments for my Kitchenaid mixer and use this to make pasta. So good!If you bake with it, keep in mind that that spelt flour weighs about 100 grams per cup versus about 125 grams for all purpose flour. You need to add more flour or cut back liquid.

This brand is .79 cheaper than anywhere local to me.
This flour is soft and luxurious to knead. I use it for challah bread, hamburger rolls, tortillas, ravioli, fettuccine and muffins/scones.

The product is fine for what it is but while I usually buy Organic I could not resist the cheaper price and my son who has gluten issues has been able to eat the organic spelt with no issues broke out in hives and had stomach issues major for a couple days. Buying organic makes a huge difference for him. He is not celiac but has issues with gluten. Something about the organic spelt makes this grain agreeable. I have had other people with gluten issues eat foods made with the organic spelt without their usual reactions to gluten as well. My guess is it is todays gluten based products modifications has rendered the gluten unrecognizable as a food source for many, therefore the body rejects it.

NOT TOO PLEASE WITH MY THIRD PURCHASE
I bought this brand twice and was very pleased. The manufactures changed the bag from red to blue and for some apparent reason, the flour had a very bad odour. I kept using it then finally had to throw the remainder away. Dont know what happened here but the manufacturer did make an excellent white flour before with the red bag.

Tasty Spelt Flour That Lasts for a Long Time
Best white spelt flour out there for the price. It tastes wonderful in all baked goods and by buying it in bulk, you save $2-3 a pound which adds up quickly. The bag closes up easily and it stays fresh for at least a year. I bake at least four times a week and this bag plus a 25 pound bag of whole spelt lasts me a little over a year. The flour was still fresh at the bottom of the bag even after all that time.

Terrific value
White spelt flour is hard to find and usually really expensive when you do. Since I cannot eat modern wheat and have to do all my own baking, I was delighted to find such a great value. It arrived promptly, just in time for Thanksgiving, and my guests were treated to delicious fresh, hot homemade rolls! I hope that this product will continue to be offered for such a great price because I will definitely reorder this!
