A Good Substitute
A very good substitute for wheat flour pancakes. It's very easy to use, and earned 5 stars in that category. For my taste, they're a bit sweet--but then, I prefer breads without sweetening, unlike (apparently) everyone else in the world. I used half-and-half instead of nut milk and increased the amount to 8-10 T rather than the 2 T called for. The pancakes were just the thickness we prefer and they were very tender (unlike other brands I've tried). This added liquid gave me 7 pancakes at 5"+. I added salt to my pancakes, as the flavor seemed a tiny bit bland, but I can't see how nut flour could have less taste than wheat flour, so this is probably just some quirk of my taste buds, resulting in 4 stars for flavor instead of 5. On the other hand, this product allows me to eat pancakes, tender pancakes, easy to make (not like recipes I've seen using coconut flour), tasty enough, and not hugely costly, so I'll happily stick with it. I like this mix not only better than other keto-types, but also better than some regular mixes I've tried. So an easy 5 stars overall.

Taste Great!! Not eggy to me.....
These were fantastic! I have been using Birch Benders Keto pancakes which I liked for convenience (only add water) and I can get them at my local grocery store. I saved these for a morning that I had time to make them but it was really easy and didn't take much more time to whip them up. I did add a splash of vanilla extract just because. I cooked them on my griddle on a two I think. It did take a little longer for them to cook but after watching them and looking for signs (bubbling, losing the glossy look) I flipped. I did split one but my second batch flipped fine, I froze those for tomorrow š. Not sure about the negative reviews regarding texture, I found it fine, not grainy or dry. No "eggy" taste, I was worried about that since you add 3 eggs. Not "gooey" maybe the others didn't cook them long enough. I think the controlled temp of my griddle helped. These are not carb loaded pancakes and will not act the same so keep that in mind when cooking.Pros- taste, lower in carbs than Birch BendersCons- take longer to cook, maybe not for beginner cooksI think I'm going to try to sub either an egg or oil with a little pumpkin and add cinnamon. Will increase the carb count but I love anything pumpkin.

Really good but expensive
First off, Iām not mad about this pancake. Compared to the egg and cream cheese crepe like pancake, this is thicker, BUT itās a thin pancake by normal standards.Pros: opening the bag was a treat. The smell is divine and I honestly checked the ingredients to make sure it was keto because it reminded me of dry vanilla cake mix.Pro: It is thicker than the fake crepe pancakes with egg and cheese.Pro: yes, you can tell there are eggs, BUT itās not overbearing at all.Pro: I actually thought the taste was pretty good, my toddler is begging for cereal š. If I am comparing this to a traditional pancake, itās ok. But for keto, itās great.Texture: the texture is kind of like a soft English muffin, not really cake like.Cons: it does NOT only take 5 minutes...double the time and youāre good.Con: the batter is actually pretty annoying to lay on the grill, it kind of conceals and then itās hard to spread evening.BUT it did Cook evenly.Con: the price is night. For the same price, I could buy 5, thatās right 5 BOXES of regular pancake mix. Or a huge one at Costco and they donāt require adding extra ingredients, so itās actually really expensive.Overall, I think these were pretty good. Add some whipped whipping cream or a strawberry, and itās really nice.

A lot of effort to make them Okay
I agree with a lot of the reviews in that if you use it for pancakes, they are still raw in the middle after the outside is cooked (this can be overcome by microwaving for about half a minute after you cook them on the griddle, but they lose all their fluff). My work around is that I use the mix for waffles instead of pancakes and there are no issues with the middle not being cooked. It helps the flavor if you add a little vanilla, about a 1/2 to 1 teaspoon per batch. If you mix the batter using a stand mixer and mix at a high speed until some air is incorporated, you can get 3 Belgian type waffles instead of 2 from a batch. The taste and texture are pretty good if you do all this. I'm only giving it 3 stars instead of 5 stars because it's a lot of work to get this mix to make a workable/palatable product, but it's worth the effort if you are feeling waffle depraved on your Keto diet. I wouldn't say it's a great value as you have to provide 3 eggs per batch and you don't get many batches from a bag, and the bag is pretty pricey. I don't think it saves much on convenience vs just finding a keto recipe to make yourself, so I probably won't purchase again.
