Authentic Japanese ramen seasoning
I love making my own ramen, and Japanese fried rice.I needed an authentic Japanese seasoning so I decided to buy this item. It is made of kombucha ( kelp seaweed), katsuobushi (dried bonito flakes), and nibosho (small dried fish).I love the combination of flavors, it’s light and smells like the ocean but not fishy nor salty.I use one packet and add it to my ramen. For stronger umami flavor, I just add Japanese soy sauce to balance out the ramen broth like a shoyu ramen. I do the same thing with fried rice. This product is made in Japan, good quality, comes in 12 seasoning packets.

Haven't try any other brand yet. My local grocer does carry the so-called generic speciality section umami stock- that "mini green box". HOWEVER, THIS I got and I believe the quality is rather supér. Yes. It's ONLY a light CLEAR broth. BUT in Japanese culture, it is suppose to be a rich wonderful flavor- that distinct seafood flavor. NOT TO BE OVERLY RICH AS IN BOMBASTIC OVERLOAD- compared to say a different kind of rich flavor as in overload of 32/45 different type of spices(say Mexican style MÓLE). I find myself drinking this broth twice on certain winterly cold coastal days, having a simple stirred fried onion chicken cabbage or/lightly black pepper seared chilli oiled tilapia with a side of Japanese sticky rice. It's all about tasting the QUALITY of the NATURAL flavor of the FOOD you are consuming. That, I will say, you will love this brand. Sticking to this for a while. GREAT QUALITY. Recommended.

Why did you pick this product vs others?:Perfect for easy miso soup.Quality:The institutions are perfect but in metric so a little math required. The taste is restaurant good with very little effort. It's as easy as making tea.

Fav Dashi—used for soup every morning
I make vegetable miso soup for breakfast every morning using this dashi and Hikari miso. A little scallion, onion, baby bok choy, and mushroom.It’s perfect. But, does have a stronger dashi flavor, so you may have to dilute it more if you don’t like the flavor so strong

Oh Wow!
After trying a number of miso soup pre-mades, including some that were very good but not quite a what I wanted, I decided to try just using the dashi packets. Oh my. What a difference! These are as simple using a teabag, but contain just the basic dried ingredients of miso. You can adjust it any way you like, or use it as an additive in a number of ways. You can sip it plain (yes it IS salty), add veggies, add rice, etc. Or you can use it to cook veggies, rice, or other soups or stews. A bit on the expensive side, since apparently you can only buy it in this large quantity of packets, but it should stay stable for quite a while. I love to make soups and stews and beans from scratch, and I'm already thinking of just dunking a packet in dishes while they're simmering to add that little umph of umami. Recommended -- just wish you didn't have to buy the large bag all at once.

Ultimate umami, very rich umami, it’s beautiful for Japanese dishes. Has small cook book included. I’m not Japanese and would never attempt to make such stock from scratch. This is so easy, toss packet into hot water, 2 min and done. Broth is amazing from this. Made miso soup to die for. Even my husband ate it and he hates ‘fish soup’ as he calls it. Very convenient thing to have if you like Asian cooking. Not cheap but I think it’s worth for the sake of clean up and time.
