If you are going to keep the trout, the best hook to use is a tiny #18 treble hook. If catch and release, use a #16 or #14 single hook with the barb pinched.

whats the best color to use? and does this bait also work for panfish?

While being formulated for trout (like what they feed trout in the hatcheries), we have caught MANY crappie with it. I like red or pink or chartreuse best. If targeting panfish, I would use white or more natural color. Hope that helps.
