I just measured mine and it extends to 35 inches.

Will this hold 8x10 canvases?

Yes. It’s fully adjustable to handle an 8x10.

Are the paints oil or water based?

Acrylic, so water based. I do not recommend this easel. Ours came broken and they would not refund us for a return.
