How many people use this outdoors? Could I leave outside for an entire summer?

Depends on where you live. If left out in rain it will collect water. If you don't intent to bring it indoors it's a non-issue, but drying and cleaning can be challenging. Especially if left outside uncovered for a long period of time.

What is the difference between the all in one set and the jumbo?

The jumbo set has more pieces enabling you to make bigger structures. My grandson loves it and has used it for an indoor climbing set as well as a store with shelves and check out area. I got the regular set but wish I had gotten the jumbo.
