Parmesan Cheese... Amazing deep flavor which is important ....
This is absolutely 1 of the best aged Parmesan cheese I have ever used. Worth the little bit of extra effort to make amazing snacks or meals with.

Oddly Soft
Oddly soft. Normally it takes effort to get Parmigiano Reggiano cheese grated. This one grated too easily, almost like a brick of generic cheddar. The flavor was also much milder than I was expecting, especially for a 24 month aged version. A minor sheen of oil was felt and seen, something unexpected for a hard cheese like Parmigiano Reggiano. It oddly lacked the crystals that are super common for Parmigiano Reggiano.Overall, a good value for the money. Not bad by any stretch. I personally prefer bolder flavor (and harder texture), but I'm sure there are those who would prefer a softer and more mild flavor like this one.I'd recommend this for someone planning on using it on a hot pasta dish, which could help mask the softness, and where bold flavor is not wanted.

Great Cheese
Highly recommend this seller, the taste and texture was great and the price was great also. I'll definitely will purchase this item again. It was wonderful on my spaghetti.

Suspicion of Age
I am a 'cheese-a-holic'. I have a dedicated cheese drawer in my refrigerator. Parmigano Reggiano is my most favored and I only buy it from Italy. However, this cheese seemed more like Gran Padano than Reggiano, it had a more soft texture, lacked crystals, and depth of flavor was not up to par with my favorite of "Red Cow". Yes, I know this cheese was just two years of age but it seemed less for other brands of that age are usually more firm and do have the salty crystals. Still, it is good and I would consider buying it again if I could obtain R.C. I use this cheese on Pizza of course, as well salads, casseroles, and just about anywhere else it might add good flavor.
