Right Handed Knife Only - Not highest grade Masamoto
There are 2 Masamotos. Masamoto Sohonten, who makes this knife, and Masamoto Tsukiji. Listing doesn’t say it but this knife has a 70/30 bevel which is for righties. I’m a lefty which means it needs to be 30/70. Can’t have it corrected because it requires a lot of material to be removed from the blade. I noticed when I was preparing some salmon for sashimi/sushi knife was steering weird while slicing close to the skin. Also, the blade is stamped, not hand forged. So if you thought you were getting a hand forged Japanese knife, prepare to be disappointed. If you want a lefty/righty 50/50 bevel, look for the Masamoto TSUKIJI Sujihiki made from VG10 steel. It’s available on a couple knife specific websites and costs ~$150 more than the 270mm one here. This blade as best as I can determine is made from VG1 steel.
