Still sharp after five years, and the best balanced knives I own.
Look, if you’re serious about cooking, like I am, then like my pappy said, you need the right tools for the job. I mean, what’s a doctor without a speculum? Or a roofer without a pick up truck? Or a government employee without an intelligence problem? You need the best stuff you can get ITK – in the kitchen. Keep up with me here. First of all, you’ll need a really good molecular slicing utility. You non-geeks might refer to this as a knife. I prefer the Shun line of professional knives because of how they look and feel. I mean, how cool is it to have a sexy Japanese knife? It comes super sharp, so be careful with it. Yes, they’re a bit pricey, but you get what you pay for. You’ll need to sharpen these once in a while, but they’ll last forever. I have had my set since 2011, and they're still sharp and wonderful. There's something about how Shun engineering manages to balance these knives - it's like they become part of you. They are so comfortable to use, and when maintained properly, it takes very little effort to cut vegetables and meats. I'm now expanding my set of Shuns for a new cooking show. Try one - you too will be impressed.

stylish little Japanese super-slicer
First off, this knife is beautiful. The wood handle and steel cap give it a sophisticated look, but most of all, it is the Damascus blade that really makes it a show-off. Back before guns, a lot of effort went into making steel sharp for swords. The Damascus technique involves folding steel tens or hundreds of times to achieve the ultimate in sharpness, and it dates back hundreds of years. This knife is a reference to those ancient swordmakers, but not exactly. Unlike true Damascus knives, Shun knives are laminated: the inner layer is a high-tech piece of expensive super-steel (called VG-10) and the outer layers (protecting the inner and bringing down the cost) are a more ordinary stainless steel. Unlike the swords of old, only the outer layers on this knife are folded. The VG-10 inner part, the part the edge is made from and the part that cuts, is a single forged piece. So in this knife, the Damascus pattern is more for looks than performance. Perhaps it also helps keep food from sticking. However I don't care what it is for - it looks fantastic. It also gives an exotic, handmade look to your kitchen cutlery. Normally Damascus knives are much, much more expensive. As for cutting, the VG-10 super steel combined with the Japanese obsession with ultra-thin, ultra-sharp edges make this knife wickedly sharp. The VG-10 core is designed to keep an edge for a long time, however all straight edged knives will need sharpening. If you never bother to sharpen your knives, get a serrated knife instead. The handle is a wood product. It is based on wood, but resin-injected and sealed so it repels water. Shun advertises it as dishwasher safe, but that would be like putting your fine china in the dishwasher - you could do it, but why take the chance? If you do dishwash it, you might want to take it out before the drying cycle, and keep the blade away from anything that could nick it. This knife is very light and sharp. The 6" length is very useful to me. I use it sometimes as a slicer, sometimes as a parer, and sometimes as a sandwich knife. It has become my main go-to knife for small jobs. Unlike other, duller knife brands, this straight-edge knife has no problem cutting bread or tomatoes. All in all, this is my ideal balance of performance and looks. There are cheaper knives on the market that perform just as well (some 1/3rd the price) but none that look as good, at any price. It is worth it to me, especially since knives generally last for decades, sometimes lifetimes.

Love this knife. Use it mostly to cut sushi. Have used almost daily for 3 weeks now and edge is still flawless

Great knife, well balanced and very sharp. Wasn’t sure if I wanted to buy a knife off of Amazon however gave it a go and not disappointed. Great price and outstanding quality

Absolutely exquisite
First impressions out of the box: This is everything you would expect out of a Shun. Immaculate craftsmanship, razor sharp. An absolutely beautiful tool. Handle felt a little small at first, and the center of gravity is slightly behind the bolster. I think this will not matter, as it's light as a feather. Ive held it for a couple of hours now, and my grip feels right at home. The asymmetrical handle feels wonderful. It automatically rotates to the right angle as soon as you grip it, for a right handed person. I cook for a living, and I can't wait to get this in the kitchen tomorrow. This is my 4th Shun product, and I don't regret any of the money I've spent on them. Expensive? Yes. But when you go to work with them, you know where that money went. If you value quality, you can't go wrong with a Shun.

Super sharp & easy to handle
Love this knife. Excellent quality. Super sharp; effortless slicing. I do think it should come with its own sleeve, however, especially for the price.

Beatiful & extremely sharp, but the handle is very small...
I'm a fan of Japanese knives. I have knives by Global, Tojiro, Fujiwara and several others. So I've wanted to pick up a Shun for a long time. I decided to pull the trigger when I saw this utility knife at a good price ($70) and it was worth the wait! This is hands down the sharpest knife I have (I just sharpened all my other knives a few days ago), and it's also the most beautiful knife I have. The real damascus steel is quite beautiful and the blonde handle is very nice qaulity. It's edge is like a razor and it easily slides through paper, paper towels, tomatoes, whatever you want to test it on. That said, there are a couple of things you should consider before you order. First, this blade is longer than I expected and very thin. It's listed as a 6 inch utility knife but the blade is closer to 7 inches. That's not a problem, but compared to a 6 inch fujiwara I have, this is less maneuverabile and not as well suited to small jobs. It's also very thin and seems really well suited for slicing, but not for harder things or really for dicing. Second, the handle is pretty small. This is the reason I changed my rating from 5 starts to 4. The size and shape of the handle feels too small for the blade (imagine a razor blade strapped to a pencil), and the more I use it, the more this seems to limit it's functionality. That said, it may just take some getting used to, so I'll update again after a few more weeks of use. Even with that one issue, I'm glad I ordered this and I'm already eyeing more Shun knives with Christmas approaching...

Having enjoyed cooking with another knife (Santoku DM-0702W) from the same range Shun Classic White, I decided to get this utility knife. The item arrived in good shape. No damage. Before use, I tried cutting some sheets of paper. To my amazement, it let me make a trail of S shapes. This is excellent. No matter how beautiful it looks, if a kitchen knife fails to cut newspaper smoothly, the knife is no use. The utility knife's blade sinks without adding any extra force on grapefruit's skin and into segments, not to mention tomato. In addition, the pakkawood grip is a lovely feel and stays in my hand without slipping. The white-ash coloured finish also lifts my spirits in the kitchen even if my cooking turns out a failure. Another big reason why I prefer this range is because of the chin that is curved without a blade to prevent an accidental stab or cut. I would often make a cut at the bladed angle chin of another model from another manufacturer. With a regular maintenance by whetstones, this will keep its excellent cut for ever.
