Will this machine work with retort pouches?

Use the pouches they recommended. There’s not a lot of space in the sealer anyway so it’s much more convenient.

Does the machine ship with the accessories needed for use with canisters?

Yes, the hoose to connect the canister to the vacuum machine is included. You can see it in the third photo (far right photo). It's a translucent silicone hose with a black piece on the canister end and an aluminum round piece on the vacuum machine end. The canisters are sold separately.

What’s the difference between this and the vp215?

The vp215 is much larger, much heavier, and much more expensive, but has a both a larger interior chamber and longer sealer bar. The vp95 is better if space is a premium and you're sealing things like a couple chops or cut-up chicken pieces. I usually seal up single servings, so that works fine for me. The vp215 can handle larger items but weighs a ton and will take up more counter space. Both of them have oil-based pumps and pull about the same amount of vacuum. (The oil-based pumps are better in many ways, but you do have to change the oil occasionally). The dome in the vp215 is high enough that you can put small mason jars in it. You'd have to use the accessory hose and a mason-jar attachment (VacMaster doesn't make one, but the one you can get for the FoodSaver works fine) to do that with the vp95.
