Magnesium stearate is a mineral.

Do these kinds have a coating on them to make them last longer in your mouth? or do they dissolve fast?

No coating. I guess they dissolve fast, but it's hard for me to know as they're tasty and I tend to eat them like candy. Which I realize defeats the purpose. :-)

Doe these mints contain actual cinnamon, or just cinnamon flavoring?

Not sure, not enough flavor for me. Gave away
