So much fun!
This DIY cheese-making kit is awesome! It comes with everything you need to get started, and the instructions are super clear, even for beginners like us. I was happy with how easy and satisfying it was to make my own cheese at home. The ingredients provided are high-quality, and the process was a fun activity to do with friends or family. The cheese tasted and there was plenty to make. I also love that it is a variety, so we could try making different types of cheese. Highly recommend this for anyone who loves cheese or is looking for a unique and enjoyable hobby!

Very impressed with this cheesemaking kit
12 years ago, I tried making my first batch of Mozzarella with another cheesemaking kit. Cutting to the chase, that effort seemingly took a couple of hours as I simply couldn't get the cheese to come together properly, even through multiple rounds in the microwave. The final product was rather small, although I was able to serve it at a party as part of an appetizer.Fast forward to today (literally) and this kit is definitely several steps up - the final product is outstanding, a mozzarella I'd be thrilled to serve to family or friends, put on a pizza, or just snack on. It's firm (from a lot of kneading), so more braid-like than ball-like, but outstanding. From the very clear instructions, using Raw Milk (I used pasteurized last time) seems to facilitate the creation of a good final product with fewer chances of failure or overwork. I also purchased (separately) three small thin mesh colanders and very heat resistant gloves, and both of these strategies paid off - the colanders to better separate the curds from the whey, and the gloves to help you knead and stretch the hot cheese during microwave rounds. You'll get multiple cheese efforts from this product; the only real replaceables (which are cheap) are citric acid, rennet and cheese (kosher) salt, when they run out. But I like the packaging, the materials are solid, and the instructions very well laid out. Personally I'm using this to kickstart other cheese efforts, like brie and cheddar, but I'm really happy that this kit did what it was advertised to do, and did it well.

The Hogwarts acceptance letter for aspiring cheese magicians ;)
Why buy cheese when you can summon it into existence like a dairy wizard? This kit is like the Hogwarts acceptance letter for aspiring cheese magicians, ready to turn your kitchen into a cheese-making classroom. Expecto Cheesum!Upon receiving this kit, I felt a surge of culinary power. It's like Dumbledore himself handed me a wand and said, "Make cheese, young wizard, and the world shall taste your dairy magic." I half-expected my cat to turn into a cheese grater.Opening the kit is like uncovering the secret ingredients to a cheesy potion. "Eye of mozzarella, wing of ricotta, and a pinch of Hogwarts magic dust." I might have thrown in some extra flair, but hey, cheese-making is a serious business. The instructions are like a spellbook, guiding you through the mystical art of cheese creation. "Stir clockwise three times, say 'cheeseus createus,' and voilà - cheese shall appear!" It's like participating in a culinary incantation that even Merlin would envy. But let's not forget the curdling process. It's like witnessing a dairy-based alchemy. One moment, you have a pot of milky innocence, and the next, you're summoning curds like you're calling forth cheese spirits. "Ricotta spiritus, arise!"And then comes the stretching and shaping of the mozzarella. It's like sculpting with edible Play-Doh, except this Play-Doh is destined for pizza greatness. I may have shaped a cheese Gryffindor lion just for the fun of it.The best part is tasting the fruits of your cheese wizardry. It's like biting into a slice of pure enchantment. You'll be tempted to send Hogwarts an owl, declaring, "Move over, Bertie Bott, we've got Cheesy Beans now!"This Mozzarella & Ricotta Cheese Making Kit is not just a kit; it's a cheese-making adventure, a magical journey into the realm of dairy sorcery. So, don your cheese-making robes, brandish your cheese wand, and may your kitchen be forever filled with the aroma of enchanting curds!

They give you 12 chances to get it right...
I just made the mozzarella recipe today. The instructions were easy to follow, the milk turned into cheese, which was all great. This was the first time I made cheese so I didn't expect perfect results. The cheese was tasty, however very firm. I found it difficult to get the cheese to 160-170 during the microwave method for the stretching step, and by the time it got to that temperature it was pretty firm already. That being said, it tasted good, like homemade cheese, and I have 11 more tries to get it right since the kit makes up to 12 lbs.I would recommend:1. Be sure to use milk that isn't ultra-pasteurized. That isn't made explicit in the instructions but it was when I researched mozzarella making online. So this is less of a "lesson" i learned than something that might trip someone else up if they haven't looked into the process of making mozzarella outside of the instructions included in the kit.2. Be sure to have all supplies out and ready to go. You spend a lot of time stirring and tending to the pot during the process, so having it all out and within reach is a huge help.3. Totally agree with the reviewer who recommends a fine mesh colander and extra 1-gallon capacity container to separate the curds from the whey. Doing it with a spoon takes waaayy too long.4. Wear latex gloves for insulation from the heat when you stretch the cheese. I doubled layers because my gloves weren't very thick.Took off 1 star because:1. The box was ripped at the perforated seam on the bottom/side when it arrived and all the stuff fell out when I took it out of the amazon box. That was annoying.2. The instructions could be more explicit with the type of milk recommended to use; also it didn't say for how long to leave the cheese in the ice bath at the end...
