They shouldn't rust being stainless steel. But not had them that long to be 100% certain.

Q: How thick is the is the steel used? NOT the overall depth but the actual thickness of the steel used?

Cant tell you actual mma but would say thicker and far more robust than any of my other (now ditched) trays. No buckling in heat. After bought more for my two daughters who gave aldo thrown their other trays away. Also incredibly easy to clean. Love them.

Yes, they are small, so they would fit in a freezer very easily. To make fruit leathers, if you normally use a baking tray to make them, I see no reason why not. They are deeper than the large standard trays, though, so...? Personally I use latex sheets for fruit leathers that way you just peel them off, I have not tried them in a baking tray before? Baking is great, they fit in my air fryer and I use them all the time no problems at all!

Q: would these trays be suitable for drying liquids in a dehydrator please

They hold liquid, wash in dishwasher, sturdily made but do not know about a dehydrator sorry. Recommend them highly for baking.
