I can’t pull the crown to set the time at all, I just it new is this defective or am I doing something wrong

Because it's water resistant, the crown screws down against a seal. Turn it counter clockwise as viewed from the side and it will release where it can be set.

How do you hand wind this product? Can you over wind it?

Rotate the crown approximately 30 times when your watch stops. Try not to wind more than 30-40 times.
