This cookbook came to the rescue. I've made quite a few of the recipes and serve them to both those needing gluten free foods and those who don't. Regardless of the audience, the food gets rave reviews. The recipes are approachable and the ingredients easy to find. I love that the authors explain the science behind why some things work for gluten free cooking whereas others don't. This knowledge has allowed me to successfully expand my gluten free cooking and baking beyond the recipes in the book. I like this cookbook so much that I've purchased numerous copies for friends and relatives who are gluten free eaters. Favorites are the bread recipes (Yes, regular sized slices and the loaves cost a fraction of what buying them in the stores cost - and they taste good), raspberry bars (I included a picture where I covered them in gluten free white chocolate for a holiday party. They were pretty and delicious.), sugar cookies and pizzas (often requested items, even by those who don't need to eat gluten free). I'm looking forward to trying the bagel recipe. A relative recently gave me a commercially-made gluten free bagel and said, "They're just like the real thing. You won't be able to tell the difference." It clearly has been a long time since she's had a non-gluten free bagel. I'm betting the ones from this cookbook will be leaps and bounds better. I can't recommend this cookbook enough if you or someone you know is interested in gluten free cooking and baking.

I do have other ATK cookbooks, notably, they have been written later and include gram values, as well as cups & ounces in the recipes. Not so this one - no grams to be found. Every one of these cookbooks stresses (what we over here have been doing for decades:) weighing ingredients, rather than measuring volume (cup measurements) for much higher accuracy. Imagine my shock / horror, when I find that every single measurement of butter in this large cookbook is in tablespoons? 7 tablespoons of cubed butter? you’re having a laugh, that’s a volume measurement! I don’t mind a bit of arithmetic in cooking - but this is just silly, only cups and ounces, no grams for anything. Also, the content is very American, not only in choice of recipes (meatloaf & “biscuits” etc) also in its plentiful comparisons, tests & recommendations of products available only in the US (Bob’s Flour Mill etc). Useless to us. Also, the photos just look dated somehow - - probably because this is a reprint of 2 earlier books - upon looking through every page twice now, I haven’t seen anything where I thought “oh that looks good, I’ll try that” - which surely is the point of every cookbook, even a gluten-free one. All-in-all, I’d rank it as one of the worst cookbooks I’ve bought - luckily I ordered 3 GF ones, and the other 2 look much better (Phil Vickery’s essential gluten-free in particular looks very good indeed, pleased with that one). Becky Excell’s one looks / seems good too, but fewer photos.

Just received it. It’s a very large and well made book. I read through the introduction chapter that reviews all their studies and testing and it has a lot of very good information in it. I also think the amount of recipes is robust and I can see many I will try to attempt. I’m not sure if I have the time to learn so much about this topic but hopefully if I can find all of the recommended ingredients the recipes will be straight forward enough that I can just follow them without having to troubleshoot failures. All and all I am very happy with this purchase I think it looks very useful and you get a lot.

The is an excellent go-to cook book for Gluten Free. As well as a lot of every day recipes, it covers how to substitute gluten free ingredients and why normal recipes may not work by just changing the flour! ATK has tested every recipe, so it's a sure-fire solution cookbook as well as providing inspiration!
