What size is the hex head thats used on the locking levers on the legs? I've misplaced the allen head tools that come with the tripod.

2.5 mm hex works on the locking levers on the legs. The upper base uses a 4 mm hex.

Can I switch out your compact ball head for my own?

There is a universal head adapter that you can buy that should give you the functionality you need. I've had no issues with the included head. It holds a heavy telephoto lens (Tamron 150-600) just fine.

Can you shoot from overhead using the tripod?

You are supposed to but I have not done so, and I suggest going to their web site to see a demo to make sure.

I need extra quick release plates for multiple cameras. What type will fit? (50mm “standard” plates do not :-( )

This tripod has it own plate design and you need their plates.
