How long is it? Long enough to carry a gundam model for a diorama?

It is not 21 inches it is more like 10 inches.

How do I open the back/ramp door? Afraid to force it in case it breaks.

It should just come down. It’s not clipped by a hook or anything. Maybe like a small bump to hold it in place. Hinges are at the bottom of the ramp door, pull from the top

if you spin one propeller will the other one also spin?

No. The propellers are not connected at all with each other. Each spins independently.
