Q: Is there any plastic on the interior that is in contact with the water?

The answer is NO. There are 2 types - plastic insert and stainless steel. Neither will allow waterto mix with the product. The only way it will occur, is if the plastic insert cracks - in whichcase I would seek replacement insert or throw out thermal dispenser.

Q: How much coffe does it hold?

I am not sure of the ounces, but our commercial carafes hold about 10-12 cups and it takes one and a half carafes to fill this thermal dispenser.

Q: Can you open the lid and pour product directly into it or is it only made for direct brew?

Yes, you can pour directly in (I use conventional Bunn pots to brew, then pour).

Q: how wide is the opening in the top of this aripot?

The opening at the top is 1 and 1/2 inches circular wide. The coffee is pumped out throughan opening that is 3/8 of an inch circular.
