How can you remove Brass Anger from a brass surface ?

After you are done aging it, you can just wipe off any surface or wash it off with water. Water stops the aging.

Worked well on the reproduction brass pulls, but the black finish rubs off on my fingers. Do I need to seal the finish?

Yes, if it is something that you touch often, door knobs, pulls, handles etc, you will want to age it, scrape off some of the black with some super fine steel wool until you get the exact look you want and then a lot of customers just buy some clear coat lacquer in a spray can to spray and seal in the look.
