I use 2 sheets for a full look on a standard size bouquet.

How is it that the shipping packaging is smaller on the long dimension, than the long dimension of the roll of paper? Do they fold the paper?

They do fold the paper. The main issue with this product is that it doesn't take creases easily. That does help to mitigate "damage" caused by them folding it, but can be annoying with folding.
