ok fruit and cheese knife
My specimen came in pile used junk kitchen knives for a dollar. Somebody cleaned out kitchen junk drawer.... What can i say, I enjoy sharpening knives. The copper coated holey one as I call it had bit sharpness but not enough to cut paper. So I sharpened it using existing bevel angle. Now it would cut paper, not effortlessly, but ok. Guessing at this point, pretty much like it was new out of package. Its a very light weight knife so not best for harder veggies. Interestingly got about same cutting ability as a five inch Farberware Pro Forged santoku I was also sharpening.So I had three successes in my pile junk knives, so upped the ante on the unsuccessful ones and sharpened them to a narrower bevel. The five inch Farberware Pro Forged santoku loved it, the higher quality steel made itself known and much, much easier cutting. Glided through food. The copper coated holey one tolerated it, at least edge didnt fold over as I thought it might. Cutting performance definitely improved, not as much as the santoku. I was able to cut up carrot much easier than before, and easier than couple people did on youtube reviews of this knife new out of package. Still wouldnt pick this knife for anything beyond cheese, fruit and softer veggies. I would guess you sharpen it as I did and the edge only touches food and hardwood cutting board that it might keep its edge for a month or two depending how much you use it. I will say I thinly sliced a summer squash and the holes in the blade kept the slices from sticking. they definitely stick to my chef knife (big tall blade). I would imagine same with a tomato though I dont have one on hand to try. No cheese on hand to try, but seriously just use a paring knife for these things, dont need a copper coated holey knife. A better quality chef knife properly sharpened make quick work of them too. The holey one is more for somebody that rarely cooks from scratch and rarely uses a sharp knife.So would I buy another one of these intentionally? Nope, its not a serious knife, its a "as seen on tv" pitchman gimmick product. No idea, but would guess they came out of factory less than $1 each. Yea its basically a dollar store knife.
