Americans have forgotten how to cook, you don't need another pan
This is simply a perfect pan for actual cooking. When you cook with this pan you make it naturally non stick, just using it makes it non stick. The 24cm size has a slightly smaller flat cooking surface than a 10" pan, a very versatile size. You can scour or scrape the pan if you burn food on, and just start the "seasoning" again, it is very easy and no worries, you just learn to cook like they have done for years.You don't need a non stick pan to slowly ruin and then buy another pan. You don't need a stainless to worry about keeping shiny, a pan doesn't have to be shiny. You don't need to be lazy and put pans in the dishwasher, seriously you shouldn't put pans in the dishwasher anyway. You do need to cook with oil or butter because it makes your food taste good, are people really healthier since using non stick pans. This is how they have cooked for centuries.This pan is nearly indestructible, just take a minute to keep it from rusting.

Awesome pan! Love the Pro series handle!
Bought this pan (Mineral B Pro 24cm) after buying a larger version direct from de Buyer. I can’t say enough great things about de Buyer pans in general and the handle of the Pro model makes them even better. Besides being more comfortable to hold, the Pro handle also seems to stay cooler while cooking.The Pro handle is also oven safe, so unlike the standard Mineral B line with the coated handle, the Pro series pans can be used in the oven without damaging the handle. While I don’t go stove top to oven very much it is nice to have that option.This is just an overall great pan. If you love cooking with carbon steel I’m confident that you will love this pan!

Best pan ever
Prior to using this pan I had been a cast iron fan for ever. This pan changed all of that. Cooking eggs with the de Buyer is an incredible experience, no more sticking, they slide out of the pan onto the plate. One of the the seriously great features of this pan is the stainless steel handle. The length and shape puts to shame the steel handles on similar pans, even those from de Buyer. It's simply a joy to pick up and use this pan. The weight and heft are a sensual pleasure. Seasoning was simple, rinse out with a soapy sponge and hot water, dry, wipe with an oiled paper towel (I used canola oil), cover the bottom with oil, set on the burner on high and burn the oil off. Wipe down the cooled pan with another paper towel and your ready to go. Never use water to clean the pan, if needs be wipe out with a paper towel or scrap clean with a metal spatula. Upon using the 9.5", I immediately ordered the 8" & 12.5".

Better than Cast Iron
This is a great pan...much better than cast iron but because it isn't black, it doesn't look as good as a cast iron pan. Seasoning was fairly easy and keeping it clean can be a chore but well worth it.

Not what I expected for how expensive pan is. check it before using
When I bought this pan I was expecting a nice flat surface instead I get a warped one. It domes out or up where the oil doesn't stay in the middle it runs to the sides making the center dry. It's a nice thickness. I included a picture of a small level and it shows it's not flat. I followed the instructions on seasoning the pan. when cooking I did not cook on high.since pan can not sit perfectly flat , heat doesn't spreads evenly.I'm returning it and getting it replaced. And before I use it I will check to see it's not DOMED as I call it.

Beautiful bronze
My first De Buyer carbon pan. It is really nice - even the packaging. I saw others complaining about how difficult it was to remove the "beeswax", so I prepared for the worst. I rinsed the pan in hot water, then put in enough Bar Keeper's Friend to make a paste. I scrubbed with a stiff brush until it foamed (including the bottom & outside of the pan). I let it soak in the sink, and every hour, I scrubbed again. Eventually, the pan started to turn brown. I thought it was rust, but it was just the beeswax. After about 4 hours, I finally gave it a rinse & used a fine grit sanding sponge all over & to even out any stains or marks from the de-waxing process - tough work. Then I washed twice with hot water & soap, rubbed hard with a paper towel. Then... Preheated the oven to 450. I put a VERY thin layer of organic flax oil on everything except the handle, then used a dry paper towel with no oil & rubbed the pan hard to remove as much of the surface oil as possible. Note: It is extremely important that you do not put a thick layer of oil on - it will cause ugly marks in the finished product. It is better to have no oil in a spot than too much. In the oven it goes... Cook for at least 20 min (you can't cook it too long or too much). Take pan out to cool slightly, but leave oven on. When the pan is still warm (you can touch it with your bare hand, but only briefly), then you can apply another THIN layer of oil (again, rub with a dry paper towel afterwards to remove as much excess as possible). Repeat. On the 3rd round, I increased the oven temp to 500 (mine will do 550, or 650 on cleaning cycle but I don't think you need to go this high). The pan is now a beautiful dark bronze with a very even seasoned coating. I imagine it will eventually turn a smooth black, but it should be good for now. Can't wait to try it out. Oh, the pan is fairly heavy, but the nice handle helps a lot - glad I got the "pro" model. I might be getting rid of my cast iron pan & getting more carbon pans. If anything, it can't stick as much as my All Clads, and should be easier to handle and clean than my cast iron. The only thing that could use a little improvement would be the sharp edge on the inside of the lip of the pan.

My favorite pan
I bought this pan about 2 years ago as a dedicated egg pan. It has performed perfectly for that task from the day I first seasoned it as I’ve never had an egg or omelette stick. At that time the omelette version of this pan was not available on Amazon, if it was I would have bought that instead. That said, I am completely satisfied with the pan i bought.
