I am looking at a manual sharpener what would you recommend?

Get yourself a Worksharp knife sharpener, either the orig one for $60, or the updated Ken Onion edition ($120), both are FANTASTIC. I’m TERRIBLE at sharpening anything, but this thing (I got the Ken Onion edition) has made it easy, quick and best of all, a “good knife sharpener” out of me! I don’t sell them, have no affiliation... I just like a good product when I get one, which is rare these days. Good luck.

How well does this hold a edge? Also after a couple sharpening does it still hold a edge like if it was new?

For those too young to remember great grandpa shaving with a straight razor, let me give you a quick education. RAZOR sharp knife means it will not hold an edge. The sharper the edge, the quicker it will dull. That's why great grandpa had a razor strop that he honed his beard cutting steel with every time he used it. A fine razor edge on a fillet knife is important, as is the knowledge that you must hone (not sharpen) the edge regularly to maintain it.

Can a lefty use this knife or is the blade made for right handers?

I am also a lefty. It works well. Really solid knife for larger fish.

What would be the best sharpening tool for this knife?

This is a large can of worms on this ask; I ask 10 folks, will get 10 answers. Since I was little, was taught to use an Arkansas stone, it's my comfort zone and haven't met a blade I couldn't hone yet. I've tried other methods, but for me, the stone is far superior. Technique and angle are critical no matter what your chosen poison for sharpening, practice, practice, practice.

Great knife for the price

I picked up this KastKing fillet knife for weekend fishing trips, and it’s been awesome so far. The blade is super sharp and flexible, which makes filleting really easy. It’s a good size—big enough to handle decent-sized fish, but not bulky.The build quality is solid. It feels well-made and not cheap at all. The handle has a nice grip, and the knife has a good weight to it—light enough to handle easily, but heavy enough to feel sturdy.The lock mechanism on the sheath is a nice touch. It clicks in securely so I don’t have to worry about it coming loose in my gear bag. Definitely a thoughtful design.For the price, this knife is a great value. Best fillet knife my husband has ever used

Got this for a present for my husband. He said it totally changed the game for him when filleting his fish. The 7 inch is perfect for maneuvering and for the size of fish he processes (rock fish, tuna, salmon). He wants another one simply because he’s never had so much ease when filleting his fish.
