I bought this Ume Plum Vinegar for a spicy fried rice recipe from The Best of the Best Hawaii cookbook, and it really brought the dish to life. The vinegar has a unique, slightly raisin-like aroma that adds a rich, tangy depth of flavor—especially when paired with soy sauce. It’s made from pickled ume plums and shiso leaf, using traditional methods, and the label highlights its rare beneficial organic acids. Not only did it elevate my fried rice, but I can definitely see it working great in marinades, salad dressings, dips, soups, or even pickled veggies. It’s one of those ancient health foods that adds both flavor and nutrition. I’ll definitely be using it again!

A condiment for everything. It is salty, not vinegary. Has an umami vibe. Enhances flavors without adding a lot of flavor on its own. Just be mindful that it adds a salty taste and 410 mg of sodium per tsp. I use it on vegetables, sauces, tofu, dressings

Unique, Alkaline Condiment
"Umeboshi" is a food seasoning which is famous for its highly unique, tart taste, which is the product of a Japanese pickled plum. "Ume" ("plum," or "wild plum"), is the fruit of a tree that grows in Asia.. This tree fruit is known as the "Japanese apricot," which is the central ingredient of a unique Japanese condiment or food known as "umeboshi." a condiment which is a traditional, very popular, and widely used in Japanese cuisine. Umeboshi is widely used in Japan as a seasoning applied to rice consumed as a breakfast food. The seasoning flavor of Umeboshi is also noted to have a particular affinity for application to members of the cabbage family. "Umeboshi" is produced from dried, unripe "ume" plums, which are inedible in their natural state, which are soaked and pickled in a brine solution containing sea salt, to which is added another unique Asian botanical ingredient which imparts a red color and added flavor to the Umeboshi. Umeboshi is highly salty, but is supposed to employ sea salt, which is highly mineralized and alkaline, and does not pose the health hazard of table salt. My interest in Umeboshi is that, PARADOXICALLY, in spite of the highly acidic content - in their natural state - of the ingredients of Umeboshi, Umeboshi has an alkalizing effect on the body. This alkalizing effect of the highly acidic Umeboshi reminds me of the equally paradoxical effect of another citric food - either fresh lemons or fresh limes - which in their natural state are acidic, but once consumed and metabolized by the body, have an alkalizing effect on the body. The alkalizing effect of Umeboshi may not be available in this Eden foods Ume Plum vinegar, which is a processed food product and may not have the natural enzymes that produce health benefits. However, This Eden food product probably does impart the unique seasoning taste - one of its merits - of Umeboshi made from natural, organic ingredients. Umeboshi is widely believed to posses healing properties. However, any such natural healing properties may not be present in Umeboshi which is not made from natural, organic ingredients. The availability of Eden foods Ume Plum vinegar, by mail order on Amazon, is extremely convenient for a consumer, as Ume Plum food products (e.g., Ume Plum paste, or Ume Plums) are usually only available in Japanese or Oriental food stores, or in rare health food stores in cosmopolitan cities. For additional information on Umeboshi see, inter alia, Chapter10, "Umeboshi: Venerable Pickled Plums," in JAPANESE FOODS THAT HEAL, by John and Jan Belleme. As a unique new food seasoning, Umeboshi has a special attraction to people, like me, who are interested in adapting to an alkaline diet (or even a vegan diet), which are in need of alkaline food seasonings, or who are on heart-healthy diets, and discover that the range of food seasoning choices previously available to them are drastically curtailed. My four star rating for this condiment is a mark of this food's unique novelty and merit as a food seasoning, for people who want to experiment for their palate. Something new to include in one's pantry!

Excellent for a soup I make
I use this in a vegan broccoli cheeze soup I make. I don't use it a lot as it is very high in sodium, but it really has excellent flavor!
