Quite good and very useful for specific needs but not a be-all end-all potato product
It has been years since I purchased dried potato cubes, perhaps as much as 35 years. They have changed for the better (fresher flavor). Glad I found these. If you want to extend something like a can of corned beef hash, or add potato dices to soups or stews, these are just about perfect. My only "beef" with them is that I needed to thoroughly rehydrate them when using in anything already fairly dry. Soups are okay as long as you give them about 30 minutes, otherwise my strong suggestion is to boil about a cup of water for reach half cup of these dices, pour in, stir several times over about 15 minutes, and then put in something you need to cook for at least 15 more minutes. These are, after all, raw potatoes that have been thoroughly dried. For an extra bit of interest I have tried adding a quarter teaspoon of salt to the hydrating water as well as using several herbs to infuse flavor right into the potatoes. Also, be aware that these are quite small. About 1/8-inch when dry and 50% bigger when hydrated. In other words, if you need good sized chunks of potato is something, these are not the solution.

"Read the directions"
I made potato-leek soup with these dehydrated potatoes & it was really tasty! I just followed the rehydration directions & it was great!

Great in soup, but needs to cook a while
I'm a huge fan of Harmony House foods, and use them often in my daily cooking. This is the only product of theirs that I haven't given a 5 star rating. Don't get me wrong - they are convenient, tasty, all-natural, and shelf stable. I've used them for several years and I'm not sorry I got them. I normally use them when I'm putting together a soup or stew that will cook for several hours. They have to boil for 15-20 minutes to get tender, and in that time I could boil real potatoes. They're also very small cubes that aren't useful to me in a lot of different recipes. About the only reason I keep these is for long term storage, or in case I can't get to the store for an extended period time. I'm giving them 4 stars because of my excellent experience with Harmony House products, and because they will store for years in my pantry.

Need to COOK to rehydrate, but then tastes good
RE-EDIT: they rehydrate well and taste wonderful IF IF IF you cook them. Add equal amounts of water and potatoes, cook on med-hi on the stove for five minutes. They soften and can be mashed if you cook longer. I added dried chives from Harmony House, McCormick bacon bits (sold in3.5 pound bulk here at Amazon, great deal), seasoned salt, pepper, butter. Fantastic. Then they can be frozen, and aren't grainy. EDIT: I was able to get passable softness (but still no taste) from these teeny specs of potato, by mixing them dry with three uncooked eggs, 1 cup non-fat milk, soaking them for an hour and then microwaving for three minutes. At least now, there's a way to eat them. The crouton idea in the original review below, doesn't work for me. These things are too tasteless and hard. Real potatoes (fresh or frozen) are better, sorry. ============ After an hour trying to rehydrate. still have the teeny-weenie rubbery chunks with no flavor. They might taste better scattered dry over a salad in lieu of or in addition to croutons. Won't buy again. Nutrition information: serving 1/4 cup, 21 grams. Calories 102 (so, comparable to a real potato), protein 2 gm, fiber 1 gram, VitC 8%, Iron 2%. All else 0%. Not as good as a regular potato.

After re hydrating. these potato bits swell up nicely and taste good - Recommend them!

Nice to know that I no longer have to worry about rotten potatoes!
Ordered these last month & they are very good. No problems with them plumping up (I let them soak for at least a couple of hours). Can use them in anything or everything, even fried them like hash browns once. Kids like them too. Will buy again. Does come in a very large bag, depends on how much your family eats. (you must know how to divide it up & use Mylar bags & food grade buckets if your family is small)

These rehydrate well. I use them for backpacking meals. Good value.

Not worth buying
Very disappointed they don’t hydrate we’ll takes a long time the reason I got these potatoes was for the convenience.. it’s faster to open a can or peel and make your own not a good value , o let them sit to hot water for 30min and they still was a little crunchy BAD BUY
