Are these jars okay for preserving and canning sealing with hot water bath?

These aren't the right lids for canning. I don't see them sealing as well as the real mason jar lids

I want to create labels and order these online but I do not the size that I would need to order for the top lid - Does anyone know ?

The size I made to fit on the lid were 2.25. I actually used my cricuit to cut and print on the label. Good luck, jars were just perfect.

About how tall is the side of the lid itself? About 1/4", 1/2"?

5/8 by measure (slightly wider than 1/2 in)

Are the lids metal and would they stick to a magnet?

The lids are metal lined with plastic. Yes, they stick to a magnet.
