How far apart are the guides center to center?

am gonna assume you mean the open space the knife goes in ...it looks about 1/4 of an inch ...there is plenty of room for most knives to use ...I was really impressed with how sturdy the guides are they really don't bend when cutting ...I gave air fryers for gifts this year ...then sent each one of these to go with it I was so impressed ...

There is nothing. Once you put the potato (or other vegetable) in it you can make slices of any length. You have to judge how deep you want the cuts and stop before cutting all the way.

Is this large enough to use with sweet potatoes?

As with white potatoes, the size of the potato is what matters. Yes, you can fit a sweet potato into the hassleback rack as long as it isn't too large.
