After sharpening & stropping to a razors edge, I "butchered" a full beef tenderloin effortlessly and was very pleased how well it handled the silver skin especially, What was more surprising to me was the Pakkawood handle, with fat & grease all over and on my hands the knife stayed in my hand without slipping at all. Great knives at a reasonable price, my new go to for blades

It is easily the best knife I have ever used to cut meat, raw or cooked. great product!!

I bought this knife out of nesscesity but I was also pretty cash poor at the time so my options were limited for something with in the realms of a “good brand” so I was taking a chance for sure as you do with anything you can’t hold immediately especially those of us who have “instant gratification” problems. However when this knife came in and I finally got around to opening it I was happy to hold it in my hands. It is important to say that this “Phantom” series might indeed be there best series. The weight is good the steel is very nice not too stiff but not with out give, firm and sharpens easy and well. The Handel is kind of built like a shun with the beble like in the DM series but wider which I find much more comfortable because it allows my grip to relax. Using this knife is very comfortable and it has helped me because of its style of blade. It makes filet chains and monk fish trimming an, well almost enjoyable experience all and all I can say that this knife is what a cook in a kitchen needs and I think overtime it will prove durable for many years to come.

Got this at a reduced promotion price. Son is a butcher and he split a lamb with this with ease. He is very pleased with it.
