Good knife for the money Did not realize I needed this type of knife in my arsenal. Got by with a good chef knife for years and always managed to be able to butcher and disassemble whole birds or large roasts. This has made those tasks significantly easier. Wish I grabbed one of these sooner

I've had this a couple years now. i still keep it in the part of the packaging with the plastic sleeve, as it is a one time per year item. If you've ever broken down a whole beef tenderloin without a boning knife, you NEED this. Watch Chef Jean Pierre's video. Get this knife. Make your christmas feast more better.

It's nice owning a great quality boning knife. This Mercer has made trimming different cuts very easy and precise. I've used it about a dozen times this month and it's still holding a good sharp edge. Handle has a great ergonomic shape and grip.
